The Sandboxtel's dining rooms share a single twelve-metre herb garden at the heart of the building — and a single philosophy, which is to use what grows here, in Linderhoek, in the season we're in.
Our main dining room, Parkzijde (Aurelian for parkside), runs from sunrise buffet through à la carte lunch, afternoon tea, and a long, unhurried dinner service. The open kitchen looks across the herb garden to the west colonnade.
Head Chef Astrid Lehn's plant-forward tasting menu changes with every new harvest from the hotel's garden and the small-holding farms of the Linderhoek valley. Nine courses, seated at twenty-four covers only, Wednesday through Saturday.
A long, low-lit room in smoked oak and bronze, with a fifty-seat bar, a seasonal cocktail list, and a library of over three hundred spirits — including twenty from small Aurelian distilleries, most of which have never left the country.
Our ground-floor bakery, open to both hotel guests and the public, with sourdough pulled hot from the oven every morning at six, single-origin coffee roasted in Linderhoek, and a small all-day menu of pastries, tartines, and the city's best espresso.
